Per aconseguir-ho, i com a part essencial de la <strong>implantaci\u00f3 d&#8217;un sistema HACCP<\/strong>, hem d&#8217;establir <strong>protocols de neteja i desinfecci\u00f3<\/strong> que s&#8217;adaptin a les necessitats espec\u00edfiques de cada instal\u00b7laci\u00f3, fent servir detergents i desinfectants adequats al tipus de superf\u00edcies i residus presents. Amb aix\u00f2, s&#8217;assoleix mantenir la innocu\u00eftat dels aliments produ\u00efts, evitant casos de toxiinfeccions aliment\u00e0ries, allargant-ne la vida \u00fatil i evitant alteracions organol\u00e8ptiques.<\/p>\n<p>Despr\u00e9s d&#8217;un procediment de neteja d&#8217;una superf\u00edcie aliment\u00e0ria hem d&#8217;efectuar una <strong>desinfecci\u00f3 correcta<\/strong>. Dins l&#8217;\u00e0mplia gamma actualment disponible de principis actius biocides (clor, amonis quaternaris, alcohols, glutarladehid, per\u00f2xids i per\u00e0cids, amines, etc.), les principals caracter\u00edstiques que hem d&#8217;exigir a un producte desinfectant s\u00f3n: ampli espectre d&#8217;actuaci\u00f3, efectivitat a baixes dosis i baix impacte mediambiental. Per tant, l&#8217;elecci\u00f3 del desinfectant a utilitzar ser\u00e0 un punt clau per <strong>garantir la m\u00e0xima seguretat i innocu\u00eftat aliment\u00e0ria.<\/strong><\/p>\n<h4><strong>Caracter\u00edstiques de la desinfecci\u00f3 amb \u00e0cid perac\u00e8tic <\/strong><\/h4>\n<p>L&#8217;\u00e0cid<strong> perac\u00e8tic<\/strong>, format a partir de la reacci\u00f3 d&#8217;equilibri entre l&#8217;\u00e0cid ac\u00e8tic i el per\u00f2xid d&#8217;hidrogen, \u00e9s un compost que compleix a la perfecci\u00f3 els requisits anteriors.<\/p>\n<h4>Ampli espectre d&#8217;actuaci\u00f3 a dosis baixes<\/h4>\n<p>El <strong>mecanisme d&#8217;actuaci\u00f3 de l&#8217;\u00e0cid perac\u00e8tic<\/strong> es basa en l&#8217;oxidaci\u00f3 dels components estructurals i funcionals dels microorganismes. Aquest mateix mecanisme \u00e9s especialment adequat per destruir la matriu extracel\u00b7lular polim\u00e8rica que es genera en pres\u00e8ncia de biofilms.<\/p>\n<p>Una concentraci\u00f3 de 150 ppm d&#8217;\u00e0cid perac\u00e8tic \u00e9s suficient per complir la norma EN-13697, que serveix com a referent per validar l&#8217;efic\u00e0cia dels productes biocides davant dels microorganismes <em>Escherichia coli, Pseudomonas aeruginosa, Enterococcus hirae i Staphylococcus aureus. <\/em>Per fer front a <em>Listeria monocytogenes<\/em> i <em>Salmonella typhimorium<\/em>, segons EN-13697, n&#8217;hi ha prou amb una concentraci\u00f3 de 75 ppm d&#8217;\u00e0cid perac\u00e8tic.<\/p>\n<p>L&#8217;\u00e0cid perac\u00e8tic compleix a m\u00e9s la norma EN-13697 fungicida i levuricida a 1875 ppm i 1200 ppm, respectivament.<\/p>\n<p>Diversos estudis demostren que la seva acci\u00f3 biocida, basada en un <strong>elevat poder oxidant<\/strong> que actua sobre prote\u00efnes i material gen\u00e8tic (ADN\/ARN), li confereix <strong>efic\u00e0cia davant de virus a<\/strong> unes concentracions entre 400 i 1500 ppm <sup>[1]<\/sup>. Tamb\u00e9 \u00e9s <strong>efica\u00e7 enfront de microorganismes formadors d&#8217;espores<\/strong><sup> [2]<\/sup>.<\/p>\n<h4>Baix impacte mediambiental<\/h4>\n<p>L&#8217;elevada reactivitat de l&#8217;\u00e0cid perac\u00e8tic garanteix que es descompongui r\u00e0pidament en \u00e0cid ac\u00e8tic i aigua, presentant un <strong>impacte residual molt baix en aig\u00fces residuals i un alt nivell de biodegradabilitat<\/strong>. Especialment, si ho comparem amb altres principis desinfectants d&#8217;\u00fas molt est\u00e8s com l&#8217;hipoclorit s\u00f2dic (que en contacte amb mat\u00e8ria org\u00e0nica i aig\u00fces residuals origina subproductes nocius com les cloramines, clorofenols o trihalometans) o els amonis quaternaris (que s\u00f3n una font important de nitrogen i no es descomponen tan r\u00e0pidament com l&#8217;\u00e0cid perac\u00e8tic).<\/p>\n<h4>Desinfecci\u00f3 de superf\u00edcies aliment\u00e0ries amb \u00e0cid perac\u00e8tic<\/h4>\n<p>Tots aquests avantatges han ocasionat, durant els darrers anys, un significatiu augment de l&#8217;\u00fas de l&#8217;\u00e0cid perac\u00e8tic com a desinfectant de primera elecci\u00f3 a la ind\u00fastria aliment\u00e0ria. El principi actiu est\u00e0 registrat com a subst\u00e0ncia activa biocida (segons Reglament (UE) 528\/2012 de Biocides) per ser aplicat tant a superf\u00edcies veterin\u00e0ries (TP3) com a superf\u00edcies aliment\u00e0ries (TP4). Per tant, els tipus d&#8217;aplicaci\u00f3 m\u00e9s habituals s\u00f3n:<\/p>\n<ul>\n<li>Recirculaci\u00f3 en neteges CIP \u2013 Es tracta de l&#8217;aplicaci\u00f3 m\u00e9s habitual i amb m\u00e9s implantaci\u00f3 a la ind\u00fastria aliment\u00e0ria. Les concentracions de principi actiu m\u00e9s usuals en el producte concentrat s\u00f3n del 5 i el 15 %, i es pot utilitzar algun tra\u00e7ador per facilitar-ne el control autom\u00e0tic mitjan\u00e7ant conductivitat.<\/li>\n<li>Neteges de superf\u00edcies obertes (OPC) \u2013 Mitjan\u00e7ant la projecci\u00f3 d&#8217;escuma. S\u00f3n productes amb una concentraci\u00f3 de principi actiu menor a la utilitzada en circuits, al voltant de l&#8217;1,5%, per reduir les mol\u00e8sties pr\u00f2pies de l&#8217;olor caracter\u00edstica del producte.<\/li>\n<\/ul>\n<h4><strong>Desinfecci\u00f3 d&#8217;aliments amb \u00e0cid perac\u00e8tic<\/strong><\/h4>\n<p>Avantatjoses <strong>caracter\u00edstiques<\/strong> (baixa toxicitat, efic\u00e0cia a baixes dosis, r\u00e0pida descomposici\u00f3 en subst\u00e0ncies inn\u00f2cues\u2026) el converteixen en un coadjuvant alimentari <strong>ideal per a aplicacions com la desinfecci\u00f3 de fruites i verdures<\/strong>. Encara que per a aquesta aplicaci\u00f3 l&#8217;hipoclorit s\u00f2dic continua sent el desinfectant m\u00e9s utilitzat, els avantatges que ofereix l&#8217;\u00e0cid perac\u00e8tic estan provocant la seva <strong>progressiva implantaci\u00f3 al mercat<\/strong>.<\/p>\n<p>Els pa\u00efsos de la Uni\u00f3 Europea es beneficien del principi de reconeixement mutu previst al tractat d&#8217;aquesta uni\u00f3. A Fran\u00e7a, es va aprovar l&#8217;\u00fas d&#8217;\u00e0cid perac\u00e8tic com a coadjuvant tecnol\u00f2gic alimentari per a la desinfecci\u00f3 d&#8217;espinacs i verdures previ al proc\u00e9s d&#8217;envasament. Aquesta aprovaci\u00f3 es fa extensiva a la resta de pa\u00efsos de la Uni\u00f3.<\/p>\n<p>Els principis actius de l&#8217;\u00e0cid perac\u00e8tic tamb\u00e9 estan acceptats per <strong>la FDA<\/strong> per a la neteja de fruites i verdures, segons recull el t\u00edtol 21 part 173:<\/p>\n<p style=\"text-align: center\"><em>TITLE 21&#8211;FOOD AND DRUGS<\/em><\/p>\n<p style=\"text-align: center\"><em>CHAPTER I&#8211;FOOD AND DRUG ADMINISTRATION DEPARTMENT OF HEALTH AND HUMAN SERVICES<\/em><\/p>\n<p style=\"text-align: center\"><em>SUBCHAPTER B&#8211;FOOD FOR HUMAN CONSUMPTION PART 173<\/em><\/p>\n<p style=\"text-align: center\"><em>Subpart D&#8211;Specific Usage Additives<\/em><\/p>\n<p style=\"text-align: center\"><em>Sec. 173.315 Chemicals used in washing or to assist in the peeling of fruits and vegetables.<\/em><\/p>\n<p>Als Estats Units tamb\u00e9 s&#8217;accepta l&#8217;\u00fas de soluci\u00f3 aquosa d&#8217;\u00e0cid perac\u00e8tic <sup>[3]<\/sup> per a la desinfecci\u00f3 de canals d&#8217;aus per reduir-ne la c\u00e0rrega microbiana.
